Winter Halloumi Salad
This beautiful salad is just full of real delights - toasted pumpkin seeds, soaked figs and then the dreamiest of orange and coriander seed dressings.
Serves 2-3
Soaked figs
5-6 dried figs, sliced
1/2 tbsp red wine vinegar
1/2 orange juice
Toasted pumpkin seeds
2 tbsp pumpkin seeds
2-3 tbsp olive oil
Pinch salt
Salad
1/2 head of radicchio
1/2 fennel, finely sliced
Pinch of mint
Pinch of parsley
Coriander seed dressing
1.5 tbsp coriander seeds, toasting and lightly crushed
4tbsp red wine vinegar
2tbsp apple cider vinegar
120ml olive oil
1/2 orange - juice and zest
1/2 lemon - juice and zest
1.5tbsp honey
Salt to season well
1 block of halloumi, fried
Start by soaking your figs. Squeeze the orange juice and red wine vinegar into a pan and place it over a medium heat until it’s hot. Pour the hot orange juice and vinegar over the sliced figs and set aside.
Make your pumpkin seeds by heating some oil in a small pan, toasting the seeds until they go a lovely golden brown and then pouring onto a plate lined with kitchen towel to soak up the excess oil. Season well with salt.
Then for the star of the show, the warm and delightful orange and coriander seed dressing. The 26 Grains team developed this beautiful recipe and it feels so seasonal and so perfect for this time of year.
Mix together your salad leaves - radicchio and fennel - and then tear your herbs over the top. Pour over the toasted pumpkin seeds, add your soaked figs and then top with your fried halloumi. Pour over a generous amount of salad dressing and serve.
