The Soda Bread Recipe

This is your sign to wake up and bake soda bread. The below recipe makes one, I doubled it up to make two. My goodness, fresh soda bread is everything. Served with smoked salmon or trout, or perhaps a deliciously glossy berry jam. Obsessed.

480g flour - I used 240g spelt, 240g plain
320g rolled oats
2 tsp salt
2 tsp bicarb
437.5g natural yoghurt
100ml milk
Combine all the dry ingredients together. Make a well in the centre and add the yoghurt and milk. Mix.
Turn out onto the surface and bring together to form a dough. Try not to overwork it. Shape into a round dough and then make a deep cross across the top using a serrated knife. Rest for 20 minutes.
Bake for 30 mins at 180C. Turn down to 160C and bake for another 10 minutes. Flip it over for the final 10 minutes. Cool before slicing.
