Pea, Mint & Feta Purée with Slow Roasted Shallots

Serves 4
6 whole large shallots
200g peas
Large handful of mint
100g feta
2 tbsp Olive oil
Salt & Pepper
Sourdough
1 lemon juice
Preheat the oven to 160C. Place your shallots on a roasting tray and put them in the oven for 50-60 minutes. Leave them to do their thing and cook the whole way through, getting very soft, sweet and delicious.
Cook the peas for 3 mins and then rinse. Either in a pestle and mortar or a blender, roughly blend peas, olive oil, feta, 1/2 the lemon juice and half of the mint. Season with pepper and any salt if needed.
Toast bread, top with pea and feta puree, squeeze out shallots from their skins and season them with salt and lemon. Top with fresh mint.
