Passion Fruit Posset w/ Langue de Chat

A beautiful, simple, summery recipe. I adore a posset; soft, creamy sweetness mixed with a citrus kick. Plus something chic and light like a langue de chat. Perfection.
Passion Fruit Posset
Serves 2
2 passion fruit
Juice of 1 lime
200ml double cream
40g caster sugar
Mix the passion fruit and lime juice together and set aside.
Mix the double cream and sugar together in a pot. Bring to boil and then remove from the heat. Pour the hot mixture straight into the lime and passionfruit mix. Pour into two cups and then allow them to cool for 10-15 minutes outside of the fridge and then allow them to set for 3-4 hours in the fridge.
Top with a langue de chat per person.
Langue de Chat
Makes 20 biscuits
60g unsalted butter
65g icing sugar
1/2 tsp vanilla
1 egg white
53g flour
Preheat your oven to 180C. Make sure to remove your baking tray from the oven so that it’s cool when you pipe your biscuit mix onto it.
Mix butter, sugar and vanilla together. You can do this in a mixer or by hand, both will do. Add egg white, this will create a horrible looking mixture, but trust the process! Add the flour and mix everything to a smooth thick batter.
Put the mixture into a piping bag and then allow it to chill in the fridge for 20 minutes.
Pipe on to a cool baking tray in straw like lines about 8-10cm long.
Bake for 12mins. Allow to fully cool before moving them.
