Mango Ginger Chia Pudding
Makes 5-6 servings
I’m a mango addict. As soon as they come into season, I can’t resist them and I’m having them for breakfast, in salads for lunch and as a salsa with BBQs. Such a versatile fruit and gosh on their own simply delicious.
1 Mango, diced
400ml coconut milk
1 tsp ground cinnamon
1 tsp ground turmeric
1 tbsp whole ginger, grated
200ml water
7 tbsp chia seeds
Optional:
Greek Yoghurt
Handful of nuts
Blueberries
Blend the mango, coconut milk, cinnamon, turmeric and ginger together. Pour it into a Tupperware and then stir through the water and the chia seeds.
Leave in the fridge for 30 minutes and then it's ready to go. Keeps in the fridge for 5-7 days.
