Crab Toast

I came back from France with the most divine collection of tomatoes. We were staying with family who had a little potager growing an ever giving, abundant collection of fruits and veg - tomatoes, aubergine, courgette, peppers, fig, quince (too early for us sadly), onions - it was incredible what a small garden can produce.
Mayonnaise
1 egg yolk
1 tsp dijon
2 tsp lemon
250ml oil - I used mixed olive oil and neutral oil
Pinch of salt
150g white crab meat
50g brown crab meat
Juice of 1/2 lemon
Pinch of salt
2-4 Tomatoes, sliced
Butter
Baguette, toasted
Handful of chives
Black pepper
Make your mayonnaise by popping all of the ingredients into a tall glass and then using a stick blender, hey presto, make your mayo. Honestly such a quick and easy trick. Note: this only works for a stick blender. If you don't have a stick blender mix egg yolk, dijon and lemon together. Then slowly with a whisk or using a small blender, add the oil little by little, fully incorporating the oil each time.
Mix the crab meat together and season with lemon and salt. Add in 1-2 tbps of mayo. Toast the baguette, top with a good helping of butter, sliced tomatoes, crab mix, chives and a good crack of black pepper.
