Corno Peppers w/ Black Pepper and Feta

I love that we haven’t had the feeling of having to ‘wait’ for summer this year. Summer has been here, in full force, showing off some might say. Every week there has been an abundance of good ingredients to choose from, be creative with and bring to life. Long may it last.
Peppers
350g corno/cornito peppers or best known on the supermarket shop as ‘sweet baby peppers’
olive oil
1 tbsp butter
2 tsp honey
1 tbsp red wine vinegar
2 tbsp capers
1 tbsp oregano
Feta & Black Pepper Dip
200g feta
3 tbsp greek yoghurt
1 tbsp cream cheese
1 tbsp olive oil
2 tsp black pepper, ground
Grilled Bread
Preheat the grill to 200C. Put the peppers into an oven proof dish and toss in olive oil. Allow to grill in the oven for 8-10minutes a side.
Blend together the feta, yoghurt, cream cheese, olive oil and black pepper.
Melt a little butter into a pan and add the capers and a little olive oil. Allow to fry for 2-3 minutes and then add the honey, red wine vinegar and oregano, cook for a minute longer.
Take the tops of the peppers off and remove the seeds. Pour over the caper butter mixture and toss until evenly coated.
Spread the black pepper and feta dip onto a plate. Top with the peppers and serve with grilled bread.
