Caraway Seeded Crackers, plus some feelings on Christmas
You’ve probably noticed by now, we’re not far off Christmas.
Previously, I’ve never been one to get too excited for Christmas. Of course I love the music and songs and chocolates, can’t forget a handful of Celebrations first thing in the each morning. But truly, it never really did it for me the same way I would see it would grip others.
But, it’s seems, my babies have cracked me open to the idea that this time is in fact, the most wonderful time of the year. The magic in their eyes as they spot the first lights, the first bauble. These kids make me want to be the Queen of Christmas. I’ve found myself scrolling and deliberating over the type of wrapping paper I’d like to use this year. We’ve written letter after letter to Father Christmas and hours have been spent creating paper chains that now stream across the ceilings of our house.
Old me thought dangling decorations on the exterior of the house was the least chic thing imaginable, yet last night I tossed a mini Father Christmas on a ladder from the window of my Children’s room to dangle and invite the festivities in. This weekend I’m off to a specific Christmas shop, a shop that sells Christmas decorations all year round and we are attempting to turn the kiddies bedroom into a twinkling Christmas grotto. I can’t stop.
Am I the only one who has done a full 180? Is it simply because the little people in my life have changed me or there’s something in the air this year?
So, with this new found enthusiasm, I’ve started testing and collecting all the Christmas recipes. I’ll be sharing a handful of recipes that I love and come back to and I’m sure by this time next year I’ll have a tried and tested version so many more.

Seeded Crackers
Chocolate Mousse
Gravlax
Saffron Ice Cream with a Walnut Brittle
Ricciarelli
26 Grain Seeded Crackers
270g rolled/quick oats
315g mixed seeds - sunflower seeds, pumpkin, flaxseed, sesame seeds
2 tbsp caraway seeds
2 tbsp chia seeds
1 tsp garlic flakes
2 tsp sea salt
3 tbsp coconut oil
375ml water
1 tbsp maple syrup
Preheat oven to 180 and line 2 baking trays with baking paper
Mix dry ingredients together in a bowl - oats, seeds, caraway, chia, garlic, salt.
Mix coconut oil, maple and 375ml water together and then add to the dry ingredients. Pack the mixture together and leave it for 10 minutes.
Put half the mixture into the centre of one baking tray, cover with baking parchement and roll to a thickness of 5mm and repeat for the other half of the batch.
Bake for 15-20 mins, flip and bake for a further 15 mins. Bake until evenly golden all over to ensure you get crispy crackers rather than just crispy edges.
Cool and then serve with cheese, parfait, rillettes, everything. I am half human half cracker at this point they are so freaking delicious.
