Blackberry Bay Cacao Porridge
There’s nothing I love more than listening to music while I cook. And there’s no better feeling than when you’re in the kitchen with friends, chefs, or customers and the whole place falls still as a great song takes over. Serves 2
Porridge
100g rolled oats
150ml water
150ml milk or oat milk
Pinch sea salt
1 tsp coconut oil
1 heaped tsp raw cacao powder
1 tsp honey
1/2 tsp vanilla
Blackberry compote
250g blackberries (keep 6 to the side and halve to top at the end)
4 tbsp water
1 tbsp sugar/maple syrup
1 bay leaf
Squeeze of lemon juice
To serve
½ apple, peeled and diced
2 tbsp nut butter
Make the blackberry compote by placing the blackberries, bay leaf, water, sugar/maple syrup and lemon juice in a small pan and allow to come to the boil. Once bubbling, take it off the heat and set aside.
Place all the porridge ingredients into a pan over a medium heat and cook, stirring continuously, until the oats start to come together, the coconut oil has melted and the cacao powder has blended in.
Spoon into two bowls and top with the blackberry compote, fresh blackberries, diced apple and nut butter.
