Apple and Spiced Hazelnut Butter Porridge

Apple Compote
3 apples, peeled and diced
1/2 lemon juice
100ml water
2 tbsp caster sugar
1 tsp apple cider vinegar
1 bayleaf
1/2 tsp vanilla
Spiced Hazelnut Butter
100g hazelnuts, toasted
1 tsp icing sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tbsp ground clove (6 cloves, blitzed before)
Small pinch of salt
Porridge
100g oats (we use a 5 grain mix which might require 50ml more water)
200ml oat milk
Salt
1/2 apple, sliced
1 tbsp hazelnuts, toasted and crushed
1 tsp rosemary finely sliced
Make the apple compote by adding everything to a pan and bringing it to the bowl. Lower and simmer for 10 minutes until the apples are lovely and soft. Take out the bay leaf and blend everything together to a smooth puree.
Toast your hazelnuts in the oven for 10 minutes at 180C. Remove from the oven and put the nuts into a magimix with icing sugar, cinnamon, nutmeg, cloves and salt. Blend until smooth, around 8-10 minutes. Note: making nut butters hasn’t worked for me in anything other than a magimix/robot coup, nutribullet/vitamixes don’t work).
Make your porridge by adding oats, milk and salt to a pan and cooking to your desired consistency. Top with apple compote, spiced hazelnut butter, fresh apple, crushed hazelnuts and a sprinkle of rosemary.
