26 Grains Cardamom Granola

I can say with certainty, this is the best granola recipe out there. I’ve tried countless variations over the years, but this is the only one I keep coming back to. It takes me straight to early mornings at Neal’s Yard, when London is still half-asleep and the scent of cardamom drifts through the air as it bakes. My love for cardamom began during a year in Copenhagen, where each tiny, brilliant bakery had its own take on the cardamom bun, where the smell of the sweet, comforting spice marked the start of a new day.
300g rolled oats
100g mixed nuts
100g mixed seeds
1 tbsp ground cinnamon
Seeds from 4-8 cardamom pods
Pinch of salt
125ml olive oil
125ml maple syrup
Preheat your oven to 160C. Mix all the dry ingredients together and stir through with a spoon to ensure all the spices are evenly mixed. Then add the olive oil and maple syrup. Pour the mix into a baking tray and bake for 40-50 minutes, stirring every 10 minutes, until it's turned into a lovely golden colour.
